Kandi Podi (Kandi Gunda)

Ingredients:

1. Toor Dal (Kandi pappu) - 1 cup
2. Chana dal (Senaga Pppu) -1 cup
3. Pesara pappu (Moong Dal) - 1/2 Cup
4. Jeera - 2 spoons
5. Red Chilies - 16
  

Preparation

1. Dry fry Toor dal, Chana dal, Moong Dal, Jeera, Red Chilies separately in  a pan.
2. Cool the fried ingredients
3. Grind all the Ingredients together in a blender

Charu Podi - Rasam poder

Ingredients:

1. Toor Dal (Kandi pappu) - 3 cups
2. Dhaniyalu (Dhaniya) - 1 cup
3. Jeera - 1/4 cup
3. Red Chilies - 8
4. Methi Seeds - 2 spoons
5. Miriyalu (Black Pepper Whole) - 1 spoon
 
 

Preparation

1. Dry fry Toor dal, Dhaniyalu, jeera, Red Chilies, Miriyalu, Methi Seeds separately in  a pan.
2. Cool the fried ingredients
3. Grind all the Ingredients together in a blender

Menthigunda Powder

Ingredients:

1. Chana Dal - 1 cup
2. Urad Dal - 1 cup
3. Red Chilies - 8
4. Methi Seeds - 1/2 spoon
5. Peanuts( Ground Nuts) - 1/2 CUP
6. Jeera  - 1/2 spoon
7. Dhaniya - 1/2 cup
 
 

Preparation

1. Dry fry Chana dal, Ural Dal, Peanuts ( ground nuts) and Red Chilies separately in  a pan.
2. Cool the fried ingredients
3. Grind all the Ingredients together in a blender


This powder is specially for Brinjal Curry

Tomato and Capsicum Chutney

Ingredients:


1.Red Peppers - 1 No's
2.Onion   - 1/2 No
3.Tomato - 1/2
4.Garlic 2-3 cloves
5.Red Chilies - 2 No's
6. Oil 2 spoons
Salt to taste

Powder:
1. Chana dal - 4 spoons
2. Red Chilies - 2 No's
3. Jeera - 1 spoon

Preparation of masala powder:
- Dry roast chana dal and cumin and fry the red chilies and keep it aside.
 

Preparation:

1. Cut the Red Peppers into pieces and fry them in a pan and keep them aside.
2. Cut the tomatoes and keep aside
4. In a pan, add 2 spoons of oil and add the red bell peppers and tomatoes and let it cool.
5. Grind the Masala powder first and then add the cooked bell peppers and tomatoes and add 1 spoon of tamarind and grind them together in a mixer. 
6. In a pan add 1/2 spoon oil and add red chillies, mustard seeds and add hing and add the seasoning to the mixture.
7. Serve with Rice.

GroundNut Chutney

Ingredients:

1. Groundnuts -1 cups
2. garlic - 2 pieces
3. Onion - 1 Nos
4. Red Chilies - 2 No's
4. Curry leaves - 4 No's
5. Tamarind Juice - 2 spoons
 
 

Procedure:

 
1. Take a pan and dry fry groundnuts and keep them aside.
2. Take a pan and add 3 drops of oil and add garlic pieces, curry leaves and add onion pieces and let it cook with salt till the onion is translucent
3. Grind all the above ingredients them in a mixer by adding little bit of tamarind juice
 
Super Groundnut chutney is ready for Idly or Dosa.
 

PEANUT POWDER:

Ingredients:

 
1 cup chana dal
½ cup peanuts
¼ cup sesame seeds
1 spoon jeera and 1 spoon dhaniya
3 cloves garlic
5 Red Chillies
2 spoons salt


Procedure:

1. Dry fry ingredients separately.
2. Then Gridn the fried ingredients.
3. First Grind Red chillies, Chana dal, dhania, jeera and garlic in the mixer, then add peanuts, sesame seeds grind them all together. Cool the powder in a place.

Sambhar

Ingredients:

1. 2 cups Toor Dal
2. Garlic 5 pieces
3. Onions - 2 No's
4. Tomatoes -4 No's
5. Water gourd - 1/4 piece (Anapakaya)
6. Carrots -2 No's
6. Turmeric powder
7. Salt
 

Masala Powder:

1. Dhaniya - 2 Spoons
2. Red Chilies - 6 No's
3. Whole Black Pepper - 12 Nos
4. Methi Seeds - 1 spoon
5.Toor Dal 3 spoons
6. Coconut  powder (optional) if you have

Masala Preparation:

Take a pan and dry fry all the Masala ingredients and grind them into powder. This is the the masala powder.

Sāmbhar Preparation:

1. Pressure cook Toor Dal
2. Take a vessel and add 1 spoon oil. Add 6 garlic pieces and fry them well.
3. Add the onion pieces and fry them for 2 minutes and they are translucent.
4. Cut the tomatoes and add them to the pan.
5. Add Anapakaya pieces and salt and turmeric powder and put the lid and let it cook for 10 minutes in low flame.
6. After the vegetables are cooked well, add the cooked dal.
7. Add 8 cups of water and salt.
8. Add the masala powder and let it cook in a low flame
 
Awesome Sāmbhar is ready to eat with hot rice or Idly.
