Dosa Batter

Ingredients:

1. Urad Dal - 1 cup
2. Rice - 2 cups
3. Salt
4. Water - 2 cups
Soak the Urad dal and Rice together in water overnight.

Preparation of Batter:

Grind the soaked urad dal and rice to a fine paste by adding 1/2 cup of water. Later add the rest of water. Add salt to the batter and set aside at least for 6 hours.


IDLI Batter

Ingredients:

1. Urad Dal - 1 cup
2. Idli Rava - 2 cups
3. Salt

Soak the Urad dal in water overnight.

Soak the Idli Rava overnight and drain all the water.

Preparation of Batter:

Grind the soaked urad dal to a fine paste by adding 1/2 cup of water. Add the Idli Rava and salt to the batter and set aside at least for 6 hours.

Peas Paratha


Ingredients:

1. Dry Peas - 1 cup
2. Cilantro -1 bunch
3. Garlic flakes - 4
4. Salt
5. Whole Wheat Flour

Soak the peas in water. Cook the peas so that they can be mashed very well.

Preparation of Filling:

Take a pan and add oil and add garlic flakes, and let them fry till golden brown and then add peas, cilantro and salt and let it cook and grind them well so that they are like a paste.

Preparation of the Dough:

1. Take a bowl and add 1 cup of whole wheat flour and add the 1/2 cup of hot water and make it as a dough.
2. Make small balls and roll it into the flat bread.
3. Fill the bread with the filling and roll it again flat
4. Take a pan and toast the bread on both the sides.

Totakoora (Amaranth) Pulusu/Sambhar

Ingredients:


1. Totakoora (Amaranth) – 1 bunch

2. Mustard seeds

3. Red Chilies -2 No’s

4. Urad Dal – 2 spoons

5. Turmeric powder – pinch

6. Salt

7. Hing – pinch

8. Curry leaves -2

9. Tamarind paste – ½ spoons




Preparation of the Ava:



Soak 6 spoons of rice and 3 spoons of mustard seeds and 2 red chilies and soak them for 15 minutes. The mixture should be grinded to a smooth paste.



Preparation of Sambhar/Pulusu:



1. In a pan, add few spoons of oil and add curry leaves, red chilies urad dal and fry it till golden brown. 
2. Cut the Amaranth/ Totakoora leaves and let it cook with the lid.
3. Add Water to the amaranth leaves and add tamarind paste to the mixture and let it boil.
4. Add the Ava paste and let it cook for some more time and bring it to boil till all the water get reduced a little bit and the pulusu is little thickened.
5. In a pan add 1 spoon of oil and add mustard seeds, hing and add them to the pulusu which is the seasoning is added finally.


Peas Toast


Ingredients:

1. Dry Peas - 1 cup
2. Cilantro -1 bunch
3. Garlic flakes - 4
4. Salt

Soak the peas in water. Cook the peas so that they can be mashed very well.

Preparation of Spread:

Take a pan and add oil and add garlic flakes, and let them fry till golden brown and then add peas, cilantro and salt and let it cook and grind them well so that they are like a paste.

Peas Toast Preparation:

1. Cut the bread into two halves.
2. Apply the spread to the bread
3. Apply butter to the pan and toast the bread on the pan till golden brown.

These are very tasty and crunchy.

Raagi Rotti



Ingredients:





1. Ragi Flour  - 1 cup
2. Chana Dal - 4 spoons (Bengal Gram)
3. Green Chilies - 2 No'sgrated
5. Carrot - 2 No's grated
6. Onions - 1 No's grated

Method:

1. Soak the Chana dal for some time. Take a mixing bowl add the above ingredients.
2. Take the pan and apply oil to the pan, and apply the batter to the pan. Let it cook with a lid and oil added to the batter.
3. Turn the Roti and let it cook without the lid.
Very tasty Ragi roti is ready.


Spagatti with veggie balls


 
Ingredients:
 




1. Spagatti - 1/2 packet
2. Green Bell Pepper - 1/2 No's
3. Carrot - 1/2 No's
4. Onion - 1/2 No's
5. Green Chilies grated  - 1/2 No's
6. Cabbage - 1/4 cup
7. Corn flour - 4 spoons
8. Soy sauce
9. Red Chili sauce

Method for Veggie Balls:

1. Take a pan and add oil and add the tiny pieces of Onions, Bell Peppers, Carrots, grated green chilies, grated cabbage and let it cook with a lid.
2. Take the Corn flour and add the cooked mixture with enough salt.
3. Make them as tiny balls and fry them in the oil.

Method for Pasta:

Bring the water to boil with salt and oil and add the pasta and let it cook for some time and remove the water and drain the hot water and run with cold water for the pasta to harden and nicely done.
In a pan add 1 spoon butter and add the pasta , soy sauce and red chili sauce. Add the veggie balls into the pasta and serve it in a place.


Vegetable Chili with Tofu


 
Ingredients:
 




1. Soy Granules - 1/4 cup
2. Vegetable broth - 1/2 cup
3. Onions - 1/4 carrot
4. Carrot - 1/4 carrot
5. Fry Tofu
6. Cinnamon - 1/4 inch
7. Pepper - 2 No's
8. Cloves- 2 No's

Masala:

Grind the cinnamon, pepper and cloves into a nice powder.

Method:

1. Take a pan and add 2 spoons butter and add onions and fry them till golden brown. Later, add carrot oil. Fry till nicely done.
2. Take the soy granules and wash them well nicely and then add them to the mixture and fry them well. Add the masala and let it cook for some time.
3. Take all the contents and let them cook in a slow cooker.
4. Add the Fried Tofu.
Very tasty Vegetable Chili with Fried Tofu is ready.


Fried Rice




Ingredients:





1. Green Beans - 1/4 cup
2. Peas - 1/4 cup
3. Carrots - 1 No's
4. Green Chilies - 1
5. Lemon - 3 spoons
6. Onion - 1
7. Rice - 1 cup
8. Cloves - 2
9. Pepper - 2
10.Cinnamon - 1/4 inch
11. Soy Sauce - 1 spoon

Masala:

Grind the Cloves, Pepper and Cloves and make it to a fine powder.

Method:

1. Take a pan and add 5 spoons of oil. Add cut Onions and fry them well till golden brown.
2. Add the chopped green beans, peas, and chopped carrots and fry them well. Add the Masala powder and mix them well. Later, add the soy sauce and let it fry for 3 minutes and turn off the flame.
2. Cook the rice separately with lemon juice, salt and 1 spoon of oil.
3. Add the cooked rice to the fried mixture and mix the rice well.
Very tasty Fried Rice is ready.


Capsicum Fried Rice


 
Ingredients:
 




1. Red Bell Peppers -1/2
2. Green Bell Peppers - 1/2
3. Yellow Bell Peppers - 1/2  
4. Green Chilies - 1
5.  Lemon - 3 spoons
6. Onion - 1
7. Rice - 1 cup
8. Cloves - 2
9. Pepper - 2
10.Cinnamon - 1/4 inch
11. Soy Sauce - 1 spoon

Masala:

Grind the Cloves, Pepper and Cloves and make it to a fine powder.

Method:

1. Take a pan and add 5 spoons of oil. Add cut Onions and fry them well till golden brown.
2. Add the Red, Green, Yellow Capsicum or bell peppers and fry them well. Add the Masala powder and mix them well. Later, add the soy sauce and let it fry for 3 minutes and turn off the flame.
2. Cook the rice separately with lemon juice, salt and 1 spoon of oil.
3. Add the cooked rice to the fried mixture and mix the rice well.
Very tasty Capsicum Fried Rice is ready.


Yogurt Rice


 
Ingredients:
 




1. Mustard seeds - 1/2 spoon
2. Chana Dal - 1 spoon (Bengal Gram)
3. Urad Dal - 1 spoon   
4. Green Chilies - 1
5. Red Chilies - 1
6. Hing (Asaphoetida) - pinch
7. Yogurt - 1 cup
8. Curry Leaves - 6 Nos
9. Rice - 1 cup
10. Cashew halves - 20 pieces
11. Peanuts - 10 pieces

Method:

1. Take a pan and add 5 spoons of oil. Add Chana dal, Urad dal, mustard seeds, green chilies, dry red chilies, Cashew halves, peanuts and fry them in oil. Add Hing and keep the mixture aside.
2. Cook the rice separately with salt and 1 spoon of oil.
3. Add the cooked rice to the fried mixture and mix the rice well. Let the rice cool down for a while and add Yogurt and mix well.
Very tasty Yogurt Rice is ready.


Lemon Rice


 
Ingredients:
 




1. Mustard seeds - 1/2 spoon
2. Chana Dal - 1 spoon (Bengal Gram)
3. Urad Dal - 1 spoon   
4. Green Chilies - 1
5. Red Chilies - 1
6. Hing (Asaphoetida) - pinch
7. Lemon - 6 spoons
8. Curry Leaves - 6 Nos
9. Rice - 1 cup
10. Cashew halves - 20 pieces
11. Peanuts - 10 pieces

Method:

1. Take a pan and add 5 spoons of oil. Add Chana dal, Urad dal, mustard seeds, green chilies, dry red chilies, Cashew halves, peanuts and fry them in oil. Add Hing and keep the mixture aside.
2. Cook the rice separately with turmeric powder, salt and 1 spoon of oil.
3. Add the cooked rice to the fried stuff and mix the rice well. Let the rice cool down for a while and add lemon juice and mix well.
Very tasty Lemon Rice is ready.


Aava Pulihora No Peanuts


 
Ingredients:
 




1. Sesame seeds powder -2 spoons
2. Mustard seeds - 1/2 spoon
3. Chana Dal - 1 spoon (Bengal Gram)
4. Urad Dal - 1 spoon   
5. Green Chilies - 1
6. Red Chilies - 1
7. Hing (Asaphoetida) - pinch
8. Tamarind Juice - 2 spoons
9. Curry Leaves - 6 Nos
10. Rice - 1 cup

Sesame seeds Powder:
Dry fry sesame seeds and grind them to coarse in a blender

Mustard Seeds Powder:

Dry fry Mustard seeds and make it a powder.

Method:

1. Take a pan and add 5 spoons of oil. Add Chana dal, Urad dal, mustard seeds, green chilies, dry red chilies and fry them in oil. Then add the Mustard seed powder and Hing and keep the mixture aside
2. Cook the rice separately with turmeric powder, salt and 1 spoon of oil.
3. Add the cooked rice to the fried stuff and mix the rice well. Add Tamarind paste and mix well.
4. Add the sesame seeds powder on top of the rice.
Very tasty Ava Pulihora is ready.
